Actually, we wanted to completely forget about the spruce. Perhaps because spruce struggles in our surroundings, where the summers are too dry, the wind too unpredictable, and the beetles too aggressive. But in the Alps, they thrive with health, and although we were searching for spicy mountain pines, we became enamored with the perfectly balanced scent of this Christmassy tree: woody, yet not too dry. Spicy, yet not astringent. Warm and soft, yet not too sweet.
